Fresh Ideas Friday

Thanks to my friend Lisa, I'm going to be more disciplined to keep updating my blog. Here is an idea to add to her "good recipe for a picnic":


A new twist on an old classic: Deviled Eggs
*I must add an advertisement here for this book, Deceptively Delicious by Jessica Seinfeld. She introduces the idea of pureeing vegetables and fruits to hide in regular recipes so that you and your kids get more nutrition without even realizing it! You can't even tell it's in there. All the recipes I've tried so far have been awesome. She also explains in detail the nutritional benefit of each veggie or fruit and what it will do for you and your kids. I definitely recommend the book!!

Needed:
6 large eggs
3 Tbsp. Mayonnaise (she says reduced fat, but i say go w/ the real thing)
1/4 c. cauliflower or carrot puree **
1/8 tsp salt
pepper/paprika to taste and for presentation (optional)

1.Place eggs in a saucepan and add cold water to cover. Set the saucepan over high heat, cover, and bring the water to a boil. Immediately remove the pan from the heat and let stand, still covered, for exactly 15 minutes. Drain the eggs, cool under cold running water, and peel.

2. Cut eggs in half lengthwise and remove the yolks. Put three of the yolks in a bowl and discard the rest (or save for another meal).

3. Add the mayo, veggie puree, and salt; mash together with a fork.

4. Fill each egg half with the yolk mixture.

**HOW TO PUREE:
You can puree as needed or prepare bags of puree ahead of time and keep in the freezer to use in recipes like this. The book shows you how to do all sorts of foods, including french toast, brownies, mac-n-cheese, and chicken nuggets.

Carrots: peel, trim ends, cut into 3-inch chunks. Steam for 10-12 minutes. Puree in a food processor or blender for about 2 minutes with a few teaspoons of water if needed for a smooth texture.

Cauliflower: cut off florets and discard core. Steam for 8-10 minutes. Puree in food processor or blender for about 2 minutes with a few teaspoons of water if needed for a smooth, creamy texture. (my favorite)

Thanks for sharing Mary. That sounds really good, and we are always looking for ways to add some more nutrition to our diets. I'll have to check out that book. Have a great weekend!
